Summertime, and the livin’ is . . .

Summertime gives many of us a chance to slow down, relax and generally take it easy.  Neighborhood picnics, barbeques, family reunions and other get-togethers are high on our to do list.  We want to help you keep it quick, simple, tasty and even elegant when you need a dish-to-share at your event.   A Bit of Country has a large variety of mixes with alternative recipes that are a cinch to make and make an impression when they are served.  Each uses just a few easy to find ingredients to make great tasting foods.

Consider this refreshing summer salad using Jill’s Lemon Poppy Seed Dip Mix: 

  •  1 pkg. Jill’s Lemon Poppy Seed Dip Mix
  • 20 oz can pineapple chunks in juice
  • 2/3 cup sour cream
  • 8 cups unpeeled apples, cubed
  • 2 cups grapes, halved
  • 1 cup walnut pieces (optional)
  • 1 cup raisins (opional)

Combine Jill’s mix with the juice from the pineapple chunks.  Add sour cream and stir well.  Fold in fruit and nuts.  Serve chilled.
